JALAPENO CILANTRO SHRIMP AND CHEESY GRITS

One of my favorite things to do is to take an original recipe that has been passed down and give it a twist of my own.  Growing up, my mom made a killer shrimp and grits. The shrimp was succulent, perfectly cooked in a tomato sauce and rested on a warm bed of cheesy grits. It was one of my favorite southern meals growing up, and today I am sharing with you my twist on a classic.

Today, I am making my Jalapeno-Cilantro Shrimp and Cheesy Grits.  It’s a twist to a classic with a bit of homage to our Spanish roots.

Jalapeno-Cilantro Shrimp and Cheesy Grits

For the Shrimp

12 oz bag of uncooked shrimp

1/2 white onion, chopped

2 medium tomatoes, diced

2 cloves Garlic, minced

1 Jalapeno pepper, minced (take the inside flesh out if you don’t want it too spicy)

1 tbs tomato paste

1/2 water

pinch of salt

pinch of pepper

2 tsp paprika

2 tbs of cilantro, divided

 

For the grits

1  cup uncooked Instant grits (cooked to box instructions)

1/2 cup of whole Milk

2 tbs of butter

1/4 cup parmesan cheese

1/2 cup of shredded mozzarella cheese

Pinch of salt

 

Instructions

For the grits

Cook the cup of grits according to package instructions

Once cooked through, add the milk, parmesan, mozzarella, salt, butter and mix to combine.

Continue to mix the grits to make sure there aren’t any clumps

Taste and add salt to taste

For the shrimp

In a medium pan set over medium heat, heat the olive oil and cook the onion for 8 minutes.

Add the tomatoes, garlic, jalapeno, salt, pepper, and paprika and cook down for another 2 minutes.

Add the water and tomato paste and stir until combined, let simmer for 5 minutes.

Add the shrimp in a single layer and cook in the sauce for 3 minutes.  Flip the shrimp and turn off the heat.

Add the cilantro and toss everything together until it’s well combined.

Serve over the cheesy grits and enjoy warm!
