MARINATED ONIONS

There are a few condiment staples that we have loved using over and over while on Whole 30.  These marinated onions are definitely one of them. They are tangy, spicy, earthy and the best topping for any dish! You can store them in the fridge for up to two weeks (if they last that long) You are going to love them!

Ingredients 

2 small red onions

1 1/2 cups of olive oil

2 tablespoons of dried oregano

3 garlic cloves, minced

1 tablespoon red wine vinegar

2 tablespoons white wine vinegar

2 pinches of salt

Direction

Thinly slice the red onion and place in a low bowl.

In a separate bowl, stir the olive oil, red wine vinegar, white vinegar, dried oregano and garlic together to combine well. Pour the mixture over the onions, making sure they are submerged.  Place in an airtight container and refrigerate.  I like to store these pint sized mason jars and shake them up every time I open up the refrigerator.

* You can make half the batch and leave them on the counter for up to 2 days. The olive oil may harden a bit in the fridge, don’t worry, you can saute with them, top over a warm protein or leave it on the counter for about 30 mins.
