SPRING WORKOUT AND MY FAVORITE OMELET

I like to change my workout routine depending on the season. During this time of year,  the weather is amazing and Spring is really shining through.  This is the perfect time to take our workouts outdoors.  These days, the kids and I are really enjoying our outdoor power walks.

I try to get outside 3-4 times a week, mostly in the morning and we all go out for 1-2 hours depending on what we have planned that day.

We start off by stretching together, then the older kids climb up on the double stroller and I carry Emory on our hiking backpack.  I start off with a light walk to warm up and then powerwalk through the neighborhood.  Depending on the difficulty and the incline of the streets, we take a couple of water breaks along the way.  I make sure to get my heart rate up and let my legs do all of the work.

We love finding playgrounds or open fields.  They give us an opportunity to take a break and the kids get a chance to play for a bit before we get back on our power walk.

This routine has been working for us and it allows us to look forward to waking up.

To fuel up, I like to have a protein-packed breakfast before heading out and I am sharing it with you today!

It’s a simple recipe using less than 5 steps and it’s all under 10 ingredients!

Mediterranean eggwhite omelet

Ingredients

1 tsp. olive oil

1/4 cup of  AllWhites® 100% liquid egg whites

1 handful of baby spinach leaves

2 tbs calamata olives, chopped

2 tbs cherry tomatoes, chopped

1 tbs feta cheese, crumbled

Pinch of salt

Pinch of oregano

Instructions

Heat the olive oil in a medium-size skillet under medium heat.

Add the AllWhites® and sprinkle with salt

Turning the pan, spread the egg whites all around the pan, forming a thin layer. Cook for one minute

With a rubber spatula, carefully flip the egg whites and cook the other side for 30 seconds

Add the spinach, olives, tomatoes, and cheese to the center of the pan and fold the omelet in half

Transfer the omelet to a plate and garnish with oregano
