Right before we head out to do a grocery haul, I like to clear my fridge. I like to grab a little of this and a little of that and make something that’s surprisingly tasty that usually leaves everyone wondering why we haven’t made it before. This is my CHIA SEED PUDDING TRIFLE. I’ve seen many recipes for trifles, but I think the best trifles are the ones that are assembled based on the ingredients that you have on hand. That way you’re not only preparing something that super scrumptious, but you are being resourceful!
The key to my trifle is a delicious chia seed pudding. It’s crunchy, tangy, sweet, and creamy. It’s everything you want a dessert to be. Here’s the thing. because I’m basing this on whatever you have on hand, you can go by taste and preference when it comes to the quantity of each ingredient.
CHIA SEED PUDDING TRIFLE RECIPE
2 cups greek yogurt
1 cup oat milk (or whatever milk you have on hand)
1 cup of chia seeds
2 tablespoons of vanilla
pinch of salt
1 tablespoon of cinnamon
1 tablespoon of cardamom
1/4 cup of honey – or more if you like it sweeter
Instructions
- Mix everything in an airtight container until combined and set in the refrigerator for 3 hours up to overnight. Mix periodically so the chia seed doesn’t set at the bottom. *
- When it comes to assembling the trifle I believe that it’s all about balance. I like adding something fresh, something crunchy, and something creamy, all on a base of bread, cake, or waffles. When it comes to fruit, I cut up whatever is at hand or frozen berries if that’s all I have.
- It all depends on what I have on hand. Today I have fresh pineapple that is close to being over-ripe. I am going to dice those up and layer it on my trifle. I also have a pancake bake that I’ve shared before here leftover so I used that as my cake base. The chia seed binds all of the layers together and then I top it all off with a generous amount of heavy cream.
This dish is SO versatile and customizable depending on taste and preference.

- Frozen berries – 3 cups and 1/4 cup of fruit jam – mixed and simmered over low heat for 20 minutes
- Mangoes
- Cooked apples – 3granny smith apples peeled and simmered on low heat for 20 minutes
Bread
- Day-old pancakes
- Poundcake
- Waffles
- Brioche bread
- Fruitcake
Chia pudding variations
- Add pumpkin puree, 1 teaspoon of nutmeg and 1 teaspoon of cloves – layer this-one with apples!
- Mix the yogurt with coconut milk, coconut sugar instead of honey and a splash of pineapple juice – layer this-one with pineapple and coconut shavings
