PORTOBELLO BAKE

We love ordering pizza for dinner. It’s a weekend staple at our home and something we really look forward to.  From time to time, I like to reinvent a meal my family loves and give it a twist or bring in familiar flavors while introducing new ones. This time around I brought in the familiar ingredients of our favorite weekend meal and elevated it by making my portobello bake that’s made with the most decadent Vero Gusto® Sauce by Barilla®.  I love Vero Gusto® Sauce from Barilla® because it’s made with the finest regional ingredients, has nothing artificial and no added sugar, making it the star of this dish!

The recipe starts off with four massive portobello mushrooms that have been cleaned and topped with olive oil. Then I add our favorite pepperoni, mozzarella cheese, and top everything off with Vero Gusto® Sauce by Barilla® that’s made using a process called tomato passata.  It’s a process that originated in Italy, that strains all seeds and skins so only the most flavorful parts (the pulp) of the tomatoes are used in the sauce. The Vero Gusto® Sauce by Barilla® elevates any dish and this portobello bake is simple and full of flavor. It can be made during the week because it’s on the table in under 30 minutes and the flavor profile is beyond what anyone expects.

Ingredients

Directions

  • Preheat the oven to 450 degrees Fahrenheit
  • In a medium baking dish set the mushrooms caps facing upwards 
  • Drizzle the caps with olive oil -you can use your hands to rub oil on the bottom. 
  • Sprinkle with a pinch of salt
  • Divide the mozzarella cheese between all four caps and top with chopped pepperoni 
  • Pour 2-3 tablespoons of Vero Gusto® Sauce over the stuffed caps
  • Bake for 30 minutes and set out to cool
  • Top with chopped basil and enjoy! 

This is such a fun recipe and it’s surprisingly hearty. My husband loves the tangy and sweetness that the sauce brings and my kids are huge fans of pepperoni and the mushroom together.  
This is one of those recipes that I make over and over because my kids love it and it’s a fun weeknight meal to enjoy as a family and all of the ingredients can be picked up at my local Tom Thumb store.  I usually make a couple of trips to Tom Thumb during the week, so I make it a point to stock up on some of my favorites.
