For a family of six, I recommend about 3–4 pounds of boneless chicken.

If you’re making chicken for meal prep or want leftovers for lunches, I recommend going closer to 4 pounds.
You can use boneless skinless chicken breasts, boneless chicken thighs, or a combination of both for these marinades.
How to Marinate Chicken
The easiest method is to use a large gallon-size zip-top bag.
Add your chicken and marinade directly to the bag. Seal it tightly, then gently massage the bag to coat the chicken evenly.
Place the bag in the refrigerator and let the chicken marinate for the recommended amount of time.
When you’re ready to cook, remove the chicken from the marinade and cook using your preferred method.
Important: Always marinate raw chicken in the refrigerator, never at room temperature.
1. Lemon Garlic Herb Chicken Marinade
This is probably the one I make most often.
This lemon garlic chicken marinade has all the fresh, bright flavors I love about Mediterranean cooking. It’s especially good for grilled chicken bowls, salads, wraps, and easy family dinners with roasted vegetables.
The lemon and garlic give the chicken tons of flavor, while the olive oil and herbs keep it juicy and flavorful.

The Best Chicken for Marinating
You can use these marinades with both chicken breasts and chicken thighs.
Chicken Breasts
Chicken breasts are lean and mild, which makes them perfect for marinades. They’re especially good when you want sliced chicken for salads, bowls, wraps, and meal prep.
Chicken Thighs
Chicken thighs are naturally more tender and flavorful because they contain more fat. They’re excellent for grilling and are a great choice if your family prefers darker meat.
If you’re using chicken breasts, try to choose pieces that are similar in size so they cook evenly.
Can I Use These Chicken Marinades for Meal Prep?

Freezer Chicken Marinade Method
This is my favorite meal prep shortcut.
Instead of putting the chicken in the refrigerator to marinate, put the raw chicken and marinade directly into a freezer-safe zip-top bag.
Press as much air out of the bag as possible and seal it tightly.
Label the bag with the flavor and date, then lay it flat in the freezer.
When you’re ready to use it, transfer the frozen chicken to the refrigerator to thaw overnight.
As the chicken thaws, it marinates at the same time.
That means you can pull a bag from the freezer in the morning, let it thaw in the refrigerator throughout the day, and have flavorful chicken ready to cook for dinner.
Freezer Chicken Meal Prep Tips
- Label every bag with the marinade flavor and date.
- Remove as much air as possible before freezing.
- Freeze bags flat so they stack easily.
- Thaw chicken in the refrigerator.
- Never thaw raw chicken on the counter.
- Cook chicken thoroughly before serving.
How to Cook Marinated Chicken

Take 20 minutes on a weekend afternoon, prep a few different marinades, divide your chicken between freezer bags, label them, and freeze them flat.
Future-you will be very happy when you open the freezer and realize dinner is basically already planned.
