Directions:
- Preheat the oven to 400 degrees F.
- Add the olive oil to a large cast iron or ovenproof skillet set over medium heat. Add the bulk sausage and cook, breaking it apart with a spoon, until nicely browned and cooked through, about 6 minutes. Transfer to a plate.
- Add the potatoes and stirring occasionally, until the potatoes start to brown and become soft – cover and lower heat if necessary. Return the sausage to the skillet and add the onions and pepper. Cook until fragrant. About 8 minutes – stirring. Stir in the garlic, salt, paprika, pepper and tomato with juices, stirring to combine and scrape up any browned bits from the pan. Bring the mixture to a gentle boil, then reduce the heat to a simmer until it thickens and becomes fragrant, about 5 minutes – if it’s too thick, add 1/4 cup of water.
- Using the back of a large spoon, create five wells in the tomato mixture. Crack an egg into each well and season with salt and pepper.
- Transfer the skillet to the oven and bake until the egg whites are barely cooked and the yolks are still runny, about 12 minutes.
- Top with herbs and green onions. Serve right away with crusty bread for a satisfying cowboy breakfast experience.
