Creamy Cheddar Pasta with Lemon & Basil

There are some nights when cooking feels like a whole production… and then there are the nights when you just want something warm, creamy, and comforting without turning your kitchen upside down.

This pasta is my answer to those nights.

It started as my little “girl dinner” — the kind of meal you make when the kids are fed, the house is finally quiet, and you just want something simple that still feels like a treat. But it quickly turned into one of those recipes I now make for the whole family… especially when I add chicken.

It’s rich, bright, a little fancy from the lemon and basil, and ridiculously easy thanks to one shortcut ingredient I always keep in my fridge.

🍝 Creamy Cheddar Lemon Basil Pasta

Ingredients

  • ½ pound pasta (any shape you love—penne, shells, or rigatoni work great)
  • 1 container Trader Joe’s Unexpected Cheddar Cheese Spread
  • ¼–½ cup reserved pasta water
  • Juice of ½ lemon
  • Flaky sea salt, to taste
  • Freshly ground black pepper
  • A handful of fresh basil, chopped

Optional (but makes it family-friendly):

  • Grilled chicken, sliced or shredded
  • Or sautéed shrimp

How to Make It

1. Cook your pasta

Bring a large pot of salted water to a boil and cook your pasta until al dente.

Before draining, reserve about a cup of that starchy pasta water. This is what helps turn the cheese into a silky sauce instead of something thick and heavy.

2. Melt the cheese base

In a large skillet over medium-low heat, add the Trader Joe’s Unexpected Cheddar Cheese Spread.

Let it warm slowly, stirring until it starts to loosen and melt into a creamy base.

This is where the magic starts.

3. Make it silky

Add a splash of reserved pasta water (start with about ¼ cup) and stir until the sauce becomes smooth and glossy.

Keep adding small amounts of pasta water until it reaches a creamy, pourable consistency that coats the back of a spoon.

4. Combine with pasta

Add your drained pasta straight into the skillet and toss until every piece is coated in that cheesy, velvety sauce.

It should feel rich but not heavy.

5. Brighten it up

Squeeze in the juice of half a lemon and season with flaky sea salt and freshly cracked black pepper.

The lemon is what keeps this from feeling too rich—it lifts everything and gives it that fresh, almost “restaurant-style” finish.

6. Add fresh basil

Turn off the heat and fold in your chopped basil.

This is the part that makes the whole dish feel alive. Warm, creamy pasta + fresh herbs = instant comfort.

7. Make it a full meal (optional but highly recommended)

If you’re serving this for the family, add:

  • Grilled chicken for a simple protein boost
  • Or sautéed shrimp for something a little more elevated

It turns this from a quiet solo dinner into a full, satisfying family meal in minutes.

Why I Love This Pasta

This is one of those recipes that doesn’t ask much of you, but gives so much back.

It’s creamy without being complicated. Bright without being fussy. Comforting without feeling heavy.

And honestly, it’s become one of my favorite ways to slow down for a moment—standing in the kitchen, stirring a simple pot of pasta, and just letting the day soften a little.
