FATHER’S DAY BISCUITS SANDWICHES
Father’s Day is right around the corner and we love celebrating to the fullest. I have a few surprises up my sleeves for Mr. G this year and he has no idea what’s coming. One of the things we love doing for Father’s Day is making Alex‘s favorite breakfast sandwich. It’s piled high with all of his favorites and it’s made with homemade Bacon lovers honey biscuits with Jimmy Dean® Applewood Smoked Premium Bacon and it’s piled high with Jimmy Dean® Fully Cooked Original Pork Sausage Patties, all of which I purchase at my local Tom Thumb.
Nothing says happy Father’s Day quite like Jimmy Dean® Bacon and Jimmy Dean® Sausage Patties. They’re both out of this world and today I’m sharing the recipe to my honey bacon biscuits and will show you how I assemble Alex’s favorite Father’s Day Brunch Sandwich!
Honey Bacon Biscuits
Ingredients
Biscuits
4 cups self-rising flour
2 tablespoons baking powder
1 teaspoon baking soda
3/4 pound (3 sticks) butter, cold, cut into 1/2-inch pieces
2 large eggs, beaten, plus 1 large egg for brushing
1½ cups buttermilk
Jimmy Dean® Applewood Smoked Premium Bacon, 12oz – fried and chopped
1/4 cup of honey
Instructions
1. In a large bowl, combine the flour, baking powder and baking soda. Add the butter and use a pastry blender to cut the butter into the flour until the pieces are even and about the size of peas. – you can also use a food processor to mix and cut the butter into the flour.
2. Stir in the eggs with a wooden spoon until combined. Stir in the buttermilk until the dough comes together into a sticky mass. Cover and refrigerate for 30 minutes.
3. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
4. On a floured surface and with floured hands, press the dough into a round, roughly 14 inches across and about 1/2 inch thick.
5. Use a floured 2¾-inch round cutter to cut out about 20 biscuits. If necessary, collect and pat out the scraps to cut more biscuits.
6. Transfer the biscuits to the prepared baking sheet, arranging them so that they all are touching.
7. In a small dish, beat together the remaining egg and honey. Brush the mixture on the top of the biscuit and top with pieces of bacon.
8. Bake until golden brown, 15 to 20 minutes. Let cool slightly in the pan on a rack.
Assembly
To assemble these delicious sandwiches, start off with a biscuit, top with Jimmy Dean® Fully Cooked Original Pork Sausage Patties, a slice of Jimmy Dean® Applewood Smoked Premium Bacon, tomato, grilled onions and lettuce!
