If there’s one condiment that I come back to over and over it’s MARINATED ONIONS. They’re tangy, hearty, full of flavor and one sure way to add so much pizzaz to your meals.
We first got into these onions when we did a Whole 30 a couple of years ago and now they’ve become a staple at our home.
This is super simple – and the best part is that they get even better as they sit in the marinade!
Ingredients
1/2 a large red onion thinly sliced and massaged – this helps break down the fiber and absorb the flavors of the marinade
1 tbs dried oregano
1/2 tbs salt
4 tbs apple cider vinegar
4 tbs olive oil
2 tbs chopped chives
Add all of the ingredients to a container with a lid and toss to combine. Let sit in the fridge for at least 1 hour and bring it to room temp when you’re ready to serve them.
So so good!
