Mini Ciabatta with Avocado, Fried Egg, Green Onions & Tomatoes
Ingredients:
- ½ cup all-purpose flour
- ⅛ teaspoon instant yeast
- Pinch of salt
- ¼ cup warm water
- Olive oil (optional)
- ½ avocado, sliced
- 1 egg
- 1 green onion, chopped
- 2–3 slices tomato
Instructions:
- Make the dough:
In a bowl, mix the flour, yeast, salt, and warm water until you get a sticky dough. Cover it and let it rest at room temperature for 1 to 1½ hours. - Preheat your skillet:
Place a cast iron skillet in the oven and preheat it to 450°F. Let it heat for 10 minutes while the dough finishes rising. - Bake your ciabatta:
Shape the dough into a loose oval and carefully place it into the hot skillet. Bake for 15–18 minutes, until the crust turns golden and crisp. - Fry the egg:
While the bread is baking, heat a little oil in a pan and fry your egg to your liking (sunny side up is our favorite for this combo). - Assemble and enjoy:
Slice the warm ciabatta. Layer on the creamy avocado, top with the fried egg, sprinkle with chopped green onion, and serve with fresh tomato slices on the side.
