Heyyyyoooo pancake lovers! I am about to change your life. I love pancakes. Top a short stack with some butter and maple syrup and I am in a good place.

What I don’t love, is standing in front of a griddle for 4324 hours while I flip and flip and flip.

So, in order to cut my time I added all of the batter to a greased baking dish and made a pancake CAKE! I know, I know, cake for breakfast isn’t a new discovery but I swirled it with peanut butter and jelly and it’s gooey and tangy and cakey and in my mouth in way less time than it takes to flip and clean on a Saturday morning.

PEANUT BUTTER AND JELLY PANCAKE BREAKFAST CAKE

Ingredients
  • 3 tbsp jam or jelly (I like strawberry, but you can add whatever flavor you like)
  • 3 tbsp crunchy or smooth peanut butter (or seed butter of your choice)
  • cooking spray
  • 1.5  cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar 
  • 1 ¼ cups milk
  • 1 egg
  • 3 tablespoons of butter, melted
  • spray oil

Instructions

  1. Put the jam into a microwave-safe bowl and heat it in 10-second bursts, stirring each time until the mixture is simply liquid enough to swirl around – it does not need to be warm. Repeat this process with the peanut butter (make sure to avoid putting in too much oil from the jar as this will just make the pancakes greasy). Set both aside.
  2. Preheat the oven to 350F and spray a 4×4 pan with oil
  3. Put the flour, baking powder, salt, and sugar into a bowl and whisk together
  4. Make a well in the center and add the milk, along with the eggs and butter. Whisk together until you have a thick batter.
  5. Pour the batter into the prepared dish and spread it out evenly.
  6. Take dollops of the jam and spoon them in sporadically, then do the same for the peanut butter. With the end of a spoon, swirl the dollops together slightly to create a marbled effect.
  7. Bake in the oven for 10–15 minutes. As soon as the surface of the pancake looks shiny and not wobbly anymore, it is ready. Remove from the oven and cut into squares. Dust with icing sugar, if liked, and serve.
