  • 1 teaspoon ground paprika
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1 tablespoon dried thyme leaves
  • 1 tablespoon dried rosemary leaves
  • 1 tablespoon dried basil leaves
  • 3 tablespoons honey
  • 2 tablespoons salt
  • 3 tablespoons olive oil
  • Zest from 1 orange and the whole orange quartered (used for stuffing)
  • Zest from 1 lemon and the whole lemon cut in half(used for stuffing)

Instructions for Spiced Roast Chicken:

  1. Preheat your oven to 425°F.
  2. In a food processor, combine all the ingredients (except the orange and lemon zest) and pulse until a paste forms. Add the zest and set aside.
  3. Rinse the chicken and pat it dry with a paper towel, ensuring the bird is as dry as possible. This step is crucial for achieving crispy skin.

  5. Cut the lemon and orange in half and place the halves inside the chicken’s cavity.
