Ingredients

For the Meatballs

  • 1½ red onions
  • 3–4 garlic cloves
  • A handful of fresh parsley
  • Italian seasoning
  • Paprika
  • Garlic powder
  • Breadcrumbs
  • 1 egg
  • Salt and black pepper
  • 2 pounds ground beef
  • Olive oil, for frying

  • Olive oil
  • 1 onion, chopped
  • Italian seasoning
  • Tomato sauce (use one you actually enjoy)
  • Salt
  • Garlic powder
  • Heavy cream
  • Fresh basil

To Serve

  • Your favorite pasta
  • Freshly grated Parmesan
  • Chopped parsley

How I Make It

Step 1: Build the meatball base

Add the red onions, garlic, parsley, Italian seasoning, paprika, garlic powder, breadcrumbs, egg, salt, and pepper to a food processor. Pulse until everything is finely chopped and well combined. This keeps the meatballs soft and evenly seasoned without needing to chop anything by hand.

Transfer the mixture to a large bowl, add the ground beef, and gently mix with your hands until just combined. Stop as soon as it comes together — the less you handle it, the more tender the meatballs stay.

Step 2: Shape + brown

Using a small ice cream scoop, portion the meatballs. Lightly toss each one from hand to hand to release any trapped air — this small step makes a big difference in texture.

Heat olive oil in a large skillet over medium heat and brown the meatballs in batches until golden on all sides. You’re not cooking them through yet, just building flavor. Set them aside.

Step 3: Simmer the sauce

In a Dutch oven, heat olive oil and sauté the chopped onion until soft and fragrant. Stir in Italian seasoning, tomato sauce, salt, and garlic powder. Let it simmer gently — no rushing.

Add the meatballs back into the sauce, then pour in the heavy cream and add fresh basil. Let everything simmer together until the meatballs are cooked through and the sauce turns rich, silky, and comforting.

Step 4: Serve and settle in

Cook your pasta in well-salted water. Spoon the meatballs and sauce generously over the pasta and finish with Parmesan and parsley.
