It’s decadent, rich, full of flavor, and is so simple to whip up on a weeknight. The best part is that the pasta is cooked in Chicken Broth right in the pot along with all of the ingredients. I start off by sautéing onions, cherry tomatoes, and garlic in olive oil. Then I add the broth to the pot, bring it to a boil, and cook it until it’s perfectly al-dente.
Cooking the pasta in chicken broth is what makes this recipe come to life. The pasta is infused with rich high-quality ingredients from the broth that transforms a simple weeknight meal into a masterpiece. After the pasta is cooked through, I add gruyere, cheddar, cream, bacon, cooked eggplant, basil, mix it all up, and transfer it to a baking dish. I top it off with a bit more cheese and in a 350-degree oven, it goes! I serve it with a bit of burrata cheese, fresh pepper, and flaky salt. The finished dish is creamy, nutty, hearty, silky and so delicious!
CREAMY EGGPLANT AND TOMATO WEEKNIGHT PASTA.
Ingredients
2 tbs olive oil
1/2 medium onion – chopped
2 cups of cherry tomatoes – chopped
3 cloves of garlic – minced
2 tbs chopped basil
1 cup gruyere cheese
1 cup white cheddar cheese
1/2 cup of chopped grilled eggplant
1/2 cup heavy cream
1/4 cup cooked bacon
1 lb of Trottole pasta (or your favorite small pasta like bowtie or penne) 48 oz Swanson® Natural Goodness® Chicken Broth
2 tbs salt

Instructions
Heat the oven to 350 degrees. In a large sauté pan, add the olive oil and cook the onions and tomatoes on medium-high heat for about 5 minutes until the tomatoes release some of their juices. Add the garlic and sauté for another 5 minutes. Bring the heat to high and add the broth and bring to a boil. Add the pasta, and cook until al-dente. The pasta will absorb the broth and cook thoroughly in the pot (add more broth if needed). When the pasta is cooked, add the cheese, cream, eggplant, bacon and mix until combined. Transfer the pasta to a baking dish and bake in a 350-degree oven for 20 minutes. Enjoy with fresh burrata cheese, fresh basil, and freshly ground pepper.
