This easy Mediterranean quiche is what I turn to when I need to shake things up with my weekly meals. It’s packed with protein and Mediterranean ingredients that pack a flavor punch. I make mine with store bought pie crust for convenience but if you’re wanting to make your own, go for it!
INGREDIENTS:
- 2 tbs butter
- 6 large eggs
- 1/2 cup heavy cream
- 1/2 cup crumbled feta cheese
- 1/2 cup white cheddar cheese – shredded
- 1 teaspoon of dried mustard
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 tablespoon salt
- 3 cloves of garlic – minced
- 1/4 cup chopped yellow onion
- 1/4 cup cherry tomatoes – sliced in half
- 1/4 cup chopped Kalamata olives
- 1 unbaked homemade pie crust or a store-bought 9-inch pie crust (i use storebought because it saves me so much time!
- Chopped green onions for serving
DIRECTIONS:
- Preheat and Sauté: Preheat your oven to 350°F. In a large sauté pan, melt the butter over medium heat. Sauté the diced onions until tender, then add the olives, garlic, oregano, garlic powder, salt and toss in sliced cherry tomatoes, allowing them to release their flavorful juices. Set aside to cool.
- Prepare the Filling: In a large bowl, whisk together eggs, heavy cream, cheeses, ground mustard and oregano. Toss in the tomato mixture.
- Assemble and Bake: Add 1 tbs of olive oil to the pie dish and set the unbaked pie crust (In this video I used a 9×13 baking pan because I couldn’t find my pie dish and it worked well!) Add the egg mixture to the crust and bake until the quiche achieves a golden hue, and the center sets with a gentle push, approximately 45 minutes. Should the crust flirt with the idea of burning, a foil shield will keep it in check.
- Rest and Serve: Patience is a virtue, especially when it comes to quiche. Let your creation stand for 5 to 10 minutes before slicing into 6 or 8 delectable portions. Add chopped onions and serve warm or at room temperature.
