I love baking during the holidays. I think it’s such a fun way to bring in seasonal ingredients that smell incredible and make everything so festive. This year, the kids and I baked these gingerbread woopie pies and they turned out amazing! We also had the opportunity to walk over to our friends house and drop a few off for them to enjoy.
You can totally crank these out in one day, but I do love recipes that you can make over the course of two days. With four kids around, sometimes breaking up a recipe like this one makes it a little less daunting and gives us something to look forward to.

My gingerbread woopie pies
1 cup of butter
1 cups granulated sugar
½ cup of molasses
2 tbs. baking soda
1 tsp. ginger
1 tsp. ground cinnamon
½ tsp. salt
½ tsp. ground cloves
2 eggs
4 cups all-purpose flour
Granulated or coarse sugar
8 oz. cream cheese softened
1-cup powder sugar
1 tsp. vanilla
Instructions
- Preheat oven to 350 degrees. Line two cookie sheets with parchment paper or grease cookie sheets. In a large bowl beat butter and the 1-cup of granulated sugar with a mixer on medium until light and fluffy. Beat in molasses, baking soda, ginger, cinnamon, salt and cloves. Add eggs; beat well. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour.
- Scoop the soft dough into twenty-four 1 3.4 inch balls. Roll balls in granulated or coarse sugar. Arrange balls 2 inches apart on prepared cookie sheets.
- Bake about 10 minutes or until edges are firm and starting to lightly brown. Cook on cookie sheets 1 minute. Transfer to wire racks and cool completely.
- For filling, in a medium bowl beat cream cheese, powdered sugar, and vanilla with a mixer on medium until smooth. Spread filling on flat sides of half of the cookies. Press flat sides of remaining cookies against filling. Cover and chill assembled whoopee pies up to 24 hours.
Makes 1 dozen whoopie pies
