Why We Love Loaded Nacho Nights
As a homeschool family, we’re together a lot, but there’s something different about gathering outside on a warm summer evening.
The kids help choose toppings, everyone builds their perfect plate, and dinner feels more like an event than a meal.

Sometimes we’ll add string lights, play music, or finish the evening with popsicles. Other nights it’s just nachos and conversation. Either way, it feels like summer.
The Best Loaded Sheet Pan Nachos
Ingredients
- 1 large bag tortilla chips
- 1 pound lean ground beef
- 1 packet taco seasoning
- ½ cup water
- 2 cups shredded Mexican blend cheese
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 large tomato, diced
- 1 jalapeño, sliced (optional)
- ¼ cup sliced black olives
- ½ cup sour cream
- 1 avocado, diced
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Preheat your oven to 400°F.
- Brown the ground beef in a large skillet over medium heat. Drain excess grease.
- Add taco seasoning and water. Simmer for 3-5 minutes until thickened.
- Spread tortilla chips evenly on a large sheet pan.
- Sprinkle half the cheese over the chips.
- Add the seasoned beef, black beans, corn, tomatoes, olives, and jalapeños.
- Top with remaining cheese.
- Bake for 8-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and immediately add avocado, sour cream, cilantro, and a squeeze of fresh lime.
- Serve family-style right from the pan.
