MANGO SALSA WITH LEMON GARLIC SALMON AND COCONUT RICE

It’s mango season, which means, it’s time for mango EVERYTHING! I love the traditional mango smoothie and mango desserts, but a mango savory dish is always a favorite.  Today I’m sharing a super simple, Lemon Garlic Salmon with Mango Salsa over Coconut Rice.  Goodness just typing that out makes me hungry.  

This is a great meal for entertaining too. The mango salsa can be made the day before and the rice and salmon can be served family-style.  

MANGO SALSA WITH LEMON GARLIC SALMON AND COCONUT RICE

Lemon Garlic salmon

  • 4 (6 oz) skinless salmon fillets
  • 3 Tbsp olive oil, plus more for the grill
  • 2 tsp lime zest
  • 3 Tbsp fresh lime juice
  • 3 cloves garlic, crushed
  • Salt and freshly ground black pepper, to taste

Coconut rice 

  • 1 cup Coconut Water
  • 1 cup canned coconut milk
  • 1 cup jasmine rice, rinsed well and drained well
  • 1/2 tsp salt

Mango Salsa

  • 3/4 cup chopped red bell pepper (1/2 large)
  • 1/3 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 large mango, peeled and diced
  • 1 large avocado, peeled and diced
  • 1 Tbsp fresh lime juice
  • 1 Tbsp olive oil
  • Salt and pepper, to taste
  • 1 large mango, peeled and diced

For the salmon

  • In a large baking dish, whisk together olive oil, lime zest, lime juice, and garlic and season with salt and pepper to taste. 
  • Slowly place salmon in a baking dish and coat salmon with marinade. Cover and leave in the refrigerator for 30 minutes, flipping after 15 minutes have gone by. 
  • Preheat a grill over medium-high heat during the last 10 minutes of marinating.
  • Brush grill grates with oil and place salmon on grill skin side down, for 5 minutes
  • Carefully turn the salmon and cook for another 5 minutes.

For the coconut rice:

  • While salmon is marinating prepare coconut rice. In a medium saucepan bring coconut water, coconut milk, rice, and salt to a full boil. 
  • Cover, lower the heat to low, and allow to simmer until liquid has been absorbed. 
  • Fluff with a fork, then let rest for 5 minutes.

For the mango salsa:

  • In a medium bowl toss together the salsa ingredients until combined.

Serve salmon warm with coconut rice top with mango salsa and enjoy every minute of it!
