MEDITERRANEAN TABOULEH WITH TOASTED PINENUTS

This is a bright, light, parsley salad that is tangy, nutty, and herby. It’s so good for the summer months or for a weekend picnic. This is my Mediterranean Tabouleh with toasted pine nuts and I promise you won’t want to remember what your life was like before this.

Here’s the key though… the best tasting Taboulehs are the ones that have all of their ingredients super finely chopped. So take your time with those herbs and veggies.

This is also one of those meals that get better with time. So if you’re entertaining, you can make it the night before, and then when your guests arrive, all of the flavors will be fully incorporated and they will all clap for you and throw flowers because this will blow their minds!

Ok let’s get to it…

Mediterranean Tabouleh with toasted pine nuts

Ingredients

  • 4 cups finely chopped parsley
  • 2 cups finely diced tomatoes
  • 2 cups finely diced cucumbers
  • 1/4 cup finely diced red onions
  • 1 tbs salt
  • 1/4 cup of olive oil
  • 1/4 cup of chopped peppermint
  • 1/4 cup lemon juice
  • 3tbs pine nuts toasted* (for topping)

* To toast the pine nuts- bring a shallow pan to medium-high heat and place them on a shallow pan. Watch them because they can burn easily. When they start turning golden, and release a toasty aroma, take them out of the pan.

Instructions

Combine all of the ingredients (except for pine nuts) in a large bowl and toss until thoroughly combined. When ready to serve, top the tabouleh with toasted pine nuts!

That’s it.

I serve this all by itself or as part of a Mediterranean Platter, or as a side to my Sheetpan Roasted Chicken!
