There are so many reasons to love Texas. First off, the weather is incredible. Some of our neighbors have a few complaints about the humidity in August but coming from Florida, Texas humidity is nothing to complain about. We also just moved here from Nebraska, and the winters there were unbearable for our family. We love the weather in Texas.

Second, let’s talk about the food! I feel like we have eaten some of the best foods while living here and we’re always finding new restaurants, new recipes and new ways of giving simple traditional recipes a Texas spin.

Today, I’m sharing all about one of our favorites. It’s a Tex Mex Lasagna and it’s made with all of the Italian ingredients that my family loves but with a homage to our love for Texas.

Ingredients

TEX-MEX LASAGNA

Ingredients

  • 1 1/2 lb. ground beef
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. ground cumin
  • 2 8 oz. can chopped tomatoes
  • 1 14.5 oz can corn, drained and rinsed
  • 16 oz. container of cottage cheese
  • 3 1/2 to 4 cups shredded Mexican blend cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 9 Skinner Lasagna noodles, cooked
  • Sliced jalapenos for serving (optional)

Instructions

  1. In a large pot, season ground beef with garlic powder, onion powder, cumin, salt and brown.
  2. Add tomato sauce, corn and simmer over medium heat for about 10 minutes.
  3. Taste to season again. Turn off heat.
  4. Spray a casserole dish with cooking oil spray.
  5. Add 1 1/2 cups sauce to the bottom of the casserole dish and spread out evenly.
  6. Top with one layer of cooked lasagna noodles (make sure noodles are cooked to instructions on the packaging)
  7. Add 1 1/2 cups sauce to the bottom of the casserole dish and spread out evenly.
  8. Spread a ½ inch even layer of cottage cheese
  9. Repeat with noodles, meat sauce, and cottage cheese
  10. Top with shredded Mexican cheese
  11. Cover with foil sealing edges tightly. Place the casserole dish on a sheet pan in case any sauce bubbles over
  12. Bake at 350 for 50 minutes. Uncover and bake for 5 to 10 minutes more.
  13. Top with sliced jalapenos and let cool for about 20 minutes before cutting and serving

This is the best combination of both worlds for us. My husband loves Italian lasagna and the Texas culture so much. I love that I can have his worlds come together in a delicious dish!
