MESSY COWGIRL BURGERS

I have a confession for you.  I will take a burger any day of the week over a super fancy meal. However, I am not always up for firing up a grill.  On those days, these messy cowgirl burgers are are my go-to.

These are so good and come together in under 30 minutes. They’re perfect for entertaining and everyone loves them. 

MESSY COWGIRL BURGERS

Ingredients:

  • 6 large brioche buns, toasted
  • 2 tablespoons olive oil
  • 1.5 pounds ground beef
  • 1/2 small onion, chopped
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 3 tablespoons Worcestershire sauce
  • 1/4 cup chicken stock
  • 1 tablespoon tomato paste
  • 2 cups shredded cheddar cheese
  • 1/2 stick of butter, melted
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • Sesame seeds

To Serve:

  • Lettuce
  • Tomato
  • Pickles

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large cast iron skillet over medium-high heat, cook the ground beef until browned, breaking it apart with a spatula as it cooks.
  3. Add the chopped onions to the skillet and cook for 8-10 minutes, or until translucent and fragrant.
  4. Season the beef mixture with salt, paprika, pepper, garlic powder, chili powder, Worcestershire sauce, chicken stock, and tomato paste. Stir to combine.
  5. Reduce the heat to low, cover the skillet, and let the flavors simmer together for 5 minutes, allowing them to marry and intensify.
  6. In a small bowl, combine the melted butter, Dijon mustard, and honey, mixing until well incorporated.
  7. Assemble the burgers: Place the toasted brioche bun bottoms in a baking dish. Spoon the seasoned ground beef mixture onto each bun bottom, adding as much or as little as desired. Top each burger with shredded cheddar cheese.
  8. Bake the assembled burgers in the preheated oven until the cheese is melted and bubbly.
  9. Remove the burgers from the oven and place the bun tops over the melted cheese.
  10. Drizzle the buttery mustard-honey glaze over the tops of the burgers, ensuring that it seeps into every cranny.
  11. Sprinkle sesame seeds over the glazed burgers for added texture and visual appeal.
  12. Return the burgers to the oven for an additional 5 minutes to allow the buttery glaze to meld into the burgers.
