PORK TENDERLOIN AND GRILLED PINEAPPLE SALAD |
There are so many things to love about summer. The amazing weather, the water activities, vacations, and the non-stop fun that lasts all day long. With a fun-filled day, sometimes getting dinner on the table is daunting. Today I’m showing you how easy it is to get a delicious grilled-dinner on the table in less than 30 minutes!
Nothing screams summer like a hot grill. For this recipe, I am sharing my Smithfield Roasted Garlic and Cracked Black Pepper pork tenderloin, grilled and served with delicious grilled pineapple, onion and goat cheese salad.
PORK TENDERLOIN AND GRILLED PINEAPPLE SALAD | A RECIPE
Ingredients
- 1 Smithfield® Roasted Garlic and Cracked Black Pepper pork tenderloin, cut into 8 thick slices
- Lettuce of your choice
- Pineapple sliced (about 4-6)
- 1/2 red or white onion sliced into 1/4 inch rounds
- 2 tbs of goat cheese
Dressing
- 2 tbs of olive oil
- 1 tbs of lime juice
- 1 tbs course mustard
- 2 tsp of maple syrup or honey
- 1 tsp salt
Instructions
- Heat grill to medium-high. Brush both sides of pineapple and onions with olive oil
- Grill pineapple and onions for 10 minutes, turning occasionally. Place vegetables aside on cutting board.
- Oil both sides of the sliced pork with olive oil and grill about 5 minutes per side until internal temperature reaches 150°F
- Meanwhile, assemble the salad
- Combine all of the dressing ingredients in a large bowl, add the lettuce and toss to coat
- Top the salad with the pineapple, onion, goat cheese and nuts and set aside
- Serve salad in a deep dish topped with the pork
The Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin is so versatile, it can also be roasted, sliced and sautéed or cubed up and slow-cooked. Also, if you have any leftovers, I love to toast some bread, top with mustard, tomato, and lettuce and whip up an easy day-after lunch. So easy!
